  • 400 g shredded chicken or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp olives, sliced
  • 1 tbsp capers
  • 2 tbsp raisins
  • 2 tbsp tomato paste
  • 1 tbsp butter or oil
  • Salt, pepper, and Caribbean spices to taste

Step-by-Step Preparation

  1. 01Carefully cut the top off the Gouda and hollow out the inside, leaving a thick shell.
  2. 02Sauté onion, garlic, and bell pepper in butter or oil until soft and fragrant.
  3. 03Add the shredded meat, tomato paste, olives, capers, and raisins. Season and cook for a few minutes.
  4. 04Fill the hollowed cheese with the warm mixture and place the top back on.
  5. 05Place in a baking dish, cover with foil, and bake at 180°C for about 40–45 minutes until the cheese is soft and melting.
